Belica 3

33 (a) e màslo šte si potskvàsiš mlèko š n prèsno kìselo
Ah, [for] butter you’ll put starter into milk, you’ll – either milk or yogurt –

34 (a) šte si go sìpeš vɤf butàlka ki tò si e bɤškɤ̀ za nèa
and you’ll pour it into a churn – there’s a separate thing for that.

35 (a) tò si e butàlka takà tòlkova širòčka
It’s a churn this wide ...

37 (a) tòlkuva visòka kòlko si sìpeš mlèko i sɤz džurùl'akᵊ tojàga

and a little wheel that goes into this churn ...

Where are you going to publish this, in the paper, or on television?

42 (a) maslòto se zberè na bùčka
… the butter clumps into lumps …

44 (a) i sìpež go
… and you pour it out …

47 (a) i mlekòto si pìeš i maslòto si pṛ̀žiš
… and you drink the milk and [use] the butter for frying.

Yes, yes, yes, yes. So then, how much butter would one woman make?

66 (a) è kòlko tò sprotì maslòto i sprotì mlekòto ako tùriš
Ah, how much! According to the butter, according to the milk. If you put in

67 (a) pòvečko mlèko ako tì e màsleno mlekòto izbìeš pòveče
more milk, and if your milk is richer, then you’ll churn out more [butter],

68 (a) ako m če sèko mlèko ne pùšta s ednàkvo màslo
but if, mm – Not all milk gives the same amount of butter,

70 (a) izbìeš pò mɤ̀ninko i takà ne mòže da ocenìšᵊ kòlko
[with some] you’ll get less. And so you can’t estimate how much.

71 (MM) e dobrè a màsloto ə go pàziš za zìmata nalì
OK. So, you keep the butter [to use] in the winter, right?

72 (a) emi kato ìma pòveče šte pàziš kato nèma trèbe šte si opṛ̀žiš
If there’s a lot you’ll keep [it]. If not, if you'll need to cook [with it].

today, tomorrow – [after] I’ve filled this little jar, then I pour water on top,

82 (a) tùrna mu màlko sòl sìpvam òšte mìne tàa nedèl'a
add a little salt, pour on some more [water], and then [after] a week goes by

83 (a) šta lìsna tàa vòda šta sìpa drùga i ako sɤ̀m go iskàrala
I’ll splash out the water and pour more on, and if I’ve made it

84 (a) na okolo gèrg'ovden čàk do nàprolet do gèrg'ovden šte si ìmam
to St. George’s day, even till spring, to St. George’s day, I’ll [still] have some.

86 (a) nèma da ti merìše na stàro ama vodɤ̀ta trèbva pres šèz dèn'a
It won’t smell old, but every six days the water should …

88 (a) da mu se mèni
… be changed.

90 (a) men'àvaš tàa vòda tùraž drùga pàk si presòlvaš solčìca
You change this water, put new water on, and salt it again with a little salt

91 (a) da si e solènko odgòre i takà
so that it’s salty on top, and there it is.

Into the hills! And there is this dairy farm there.

They milked water buffaloes, they make both cheese and butter. It’s like –

Hvojna 1

and butter comes out, as well as “ushmer”, which they pour out separately

Kralevo 2

when you churn [the milk] but water buffalo milk yields more butter.

56 (a) krài kràvite pòveč’e ml’àg dàvət əmə pò màlku màslu
Cows give [you] more milk but less butter.

76 (a) i gà sə izbɤ̀rkə
and when it’s done churning …

78 (a) məslòtu sə ud’èlə udgòre izvàdəš məslòtu

Mogilica 2
