Sheep give better milk, [you know]. In those years I had two sheep,

and a goat – when I milked [it] I’d mix [it with sheep’s milk]. It’s different, [they] say.

Sheep’s milk is thicker, better to put –

Sheep’s [milk is better] than cow’s [milk].

Sheep’s [milk] is thicker, with more fat. Cow’s milk is thinner,

39 (a) i pò màlko i gà izbʌ̀rkəš ut kràvə də izbʌ̀rkəž drùgu je
and [there’s] less of it. And when you churn, churning [milk] from a cow is one thing,

40 (a) ud òfču gà izbʌ̀rkəš drùgu je
and churning [milk] from a sheep is another.

41 (GK) a ot kòzata
And from a goat?

42 (a) kòzte sə òšte pò r’àtku kòze̥štutu e r’àtku ml’àku
[Milk from] goats is even thinner. Goat’s [milk] is thin milk.

43 (GK) tɤ̀j li nàj gɤ̀sto nə tovà
Is that right? And the thickest [you get is] from – ?

44 (a) nàj gʌ̀stutu e òfč’utu̥ si ml’àku òfč’utu̥ si ml’àku
Sheep’s milk is the thickest. Sheep’s milk –

45 (a) tòj si e nàj hùbəvu
that’s the best [of all].

121 (a) i kəškəvàl s’à pràim pò əmə kòzitu pò r’àtku ml’àku n’è e
Now we make kashkaval more – but goat milk is thinner, it’s not …

123 (a) ə n’è i kàktu òfčitu kràvitu
… it’s not like sheep’s [milk] or cow’s [milk].

125 (a) kòzitu pò r’èdičku
Goat [milk] is a little thinner.

127 (a) pò r’àtku ml’àku
[It’s] thinner milk.

128 (b) a pɤ̀k i pò màznu
And there’s also more fat.

It’s with more fat, and more buttery, but still it’s thinner.

131 (b) ama kəm isintɤ̀ sə [unintelligible]
But [when it gets] towards autumn –

132 (a) esentɤ̀ stàvə gɤ̀stu v’èči kətu nəməl’àvə hrənɤ̀tə
In the autumn it gets thicker when there’s less food

133 (a) i pòčvəž də gi xràniš səs
and you start to feed them with –

134 (b) i v’èči utvərd’àvə sə tuvà tr’evìti ednò drùgu i
The different grasses and other [things they eat] get harder, and –

135 (b) i stàvə vèči gɤ̀stu ml’àkutu
and the milk gets thicker.
