We dry it – we boil it, then dry it, and when it’s nicely dried

28 (a) ama vrɤtìme vrɤtìme somèleme i svàrime bulgùr
So we turn, turn, and grind [it], and [then] cook up bulghur.

29 (a) namèsto sùpa nìe go pràeme togàva bulgùr go kàzva:me
Back then we made it in place of soup. Bulghur [is what] we called it.

31 (a) i vìkame àjde č’e adèm prɤ̀vo bulgùr i pòsle k’e jadème fasùl
And we’d say, “O.K., first let’s eat bulghur, and then we’ll eat the beans.”

from wheat. Bulghur. What are you going to do? No wheat even,

[so you use] whatever you’ve got. [laughter]

28 (VZh) a bəlgùrət kàk go pràvexte
And how did you make bulghur?

29 (b) bərgùl’ət z’èmme gu pupàrime gu ə z’èmme č’èncətə izmìeme
[For] bulghur, we take and scald it, we take the wheat and wash it –

30 (b) nə visàt idnì nə če̥šm’àtə
[in one of] these things [that] hang there at the well –

32 (a) izmìe gu də n’èmə šùšt’e izmìem gu če tugàvə gu klədème
we wash it so there are no husks left. We wash it and then we put it

33 (b) f kəzàn’ə svərìme gu če gu mel’ème nə rəšnìcətə
into a kettle and boil it. Then we grind it with a hand stone mill.

34 (b) əmə tò c’àlo e jòk [laughter]
But not all at once! [laughter]

36 (b) jòg gu c’ɛ̀lu vərìme jòg gu təkòvət c’ɛ̀lu postàjeno
We don’t cook it all at once. We cook it, but not putting [it in the pot] all at once.

38 (b) ejà smel’ème gu kətu urìs gu zəpràime pò drèmničku èj təkìə ràbuti
So we grind it the size of rice grains, we make it smaller. Things like that.
